Well-trimmed fillets have the red (dark) meat line, belly fat, and all skin fully removed — this gives the cleanest white appearance and the highest yield for consistent portion weights, which is why it’s the default choice for EU and US retail shelves. Semi-trimmed retains the red meat but removes the belly, offering a lower cost per kilogram that’s well suited to institutional and QSR buyers where visual presentation matters less than cost. Untrimmed keeps both the red meat and belly fat, making it the most economical option and a common choice for buyers who will further process the fillet themselves. Skin-on fillets retain the skin for grilling and pan-sear applications where the skin helps hold the fillet together during cooking.

Glazing, packaging, and private label options
Nearly all IQF (Individually Quick Frozen) pangasius is glazed — a thin water coating applied during freezing that prevents dehydration and freezer burn during transit. Standard glaze rates are 10%, 15%, or 20%, meaning the declared net weight is the drained weight after thawing. Always confirm which glaze basis a quoted price reflects before comparing suppliers.
